An Easy Breakfast For One
This is a special morning treat for myself when it’s just me.
I often find myself in the mad rush to get the kids fed, dressed, and out the door in time for the bus moving in complete adrenaline mode. My quiet time is that first hour after all of the kids are off. I don’t want to add to the mess the kids have already created but I need something to recharge.
This mug breakfast is perfect. It contains the mess, making the dish in the same one you eat it in. I toss my ingredients into the mug, load the dishwasher while it’s heating up, grab a book and my breakfast and head to a comfy place for a little me time. Soon enough I’ll have laundry and bathrooms to scrub. This first hour is all about me and there is something about starting it off with a good warm breakfast that gives me the energy to take care of everything else.
I have yet to introduce my kids to this recipe. For now it’s just my special quiet moment to great the day.
