If you’re feeling a bit naughty in the kitchen, you have to throw together this slow cooker recipe for my BBQ Grilled Cheese Sandwiches.
It has tender, pulled chuck roast, creamy mac and cheese, and extra gooey melted cheese piled all into two slices of toasty bread. This sandwich is not for the faint of heart!
Between the BBQ sauce, and the melted cheese, you’re going to have a messy mouthful of yum every time you take a bite. Make sure to lick your fingers clean because you won’t want to miss a drop of this recipe!
Ingredients:
1 recipe shredded BBQ beef
1 recipe macaroni and cheese
sourdough bread
butter, for spreading on the bread
cheddar cheese slices (3 per sandwich)
Instructions:
Preheat a skillet over medium heat.
Spread butter on one side of each slice of bread.
Place one slice of bread, butter side down, in the skillet.
Top with 1 slice of cheddar cheese, a large spoonful of the shredded beef, another slice of cheddar, a scoop of macaroni and cheese, a third slice of cheddar, and the second piece of bread.
Cook until the bottom piece of bread is crispy and golden. Carefully use a spatula (and your fingers to hold the sandwich together!) to flip. Continue cooking until the bottom slice of bread is cripsy and golden.
Repeat to make as many sandwiches as desired.
Let sit 3 minutes before cutting and serving.

Quick Tip: Make sure your shredded beef is drained of excess liquid before putting it on the bread.
