Since i’ve changed my eating habits I’ve fully embraced my love for the classic, comforting casserole. And this Cheesy Chicken and Rice Casserole is no exception. It’s so delicious—the perfect dish to fill you up after a long day at work—and is a breeze to make. I’d be willing to bet you have all the ingredients you need for it right now!
After making the rice all you do is mix everything together and bake it up until it’s hot and melty just like a casserole should be. Each bite is like a warm hug and you’ll find yourself going back for seconds before you know it.
Ingredients
1 Box Yellow Rice (I like Zatarain’s)
1 Can Cream of Chicken Soup
1/4 Cup Milk
2 Cups Shredded, Cooked Chicken
2 Cups Shredded Cheddar Cheese
1 Cup Frozen Corn
Pepper to taste
OPTIONAL: 1 small can of diced green chilis
Instructions
Cook rice according to package directions
Add rice and all other ingredients (except about 1/2 cup of shredded cheese) into a bowl and mix until well combined.
Spoon into a casserole dish and top with remaining cheese.
Bake at 350 for about 30 minutes, or until bubbly.
