I’ve got a confession to make. For most of my adult life I’ve been afraid of stepping out of my kitchen comfort zone and tackling recipes that look like they’re only meant for “the professionals.” And, yes, that means I’ve shied away from baking with yeast, poaching eggs, and roasting chicken and turkey.

However, a little over a year ago a dear friend of mine invited me to a housewarming party after her and her family settle into their new home just a few blocks from ours. She asked me to make a dessert, so I dutifully baked a pan of brownies and a tray of cookies and headed over there with my husband in tow.

We rang the doorbell and waited to be let in. After a moment my friend opened the door wide and swept me up in a hug before turning me towards the kitchen. And then it hit me. The most tantalizing smell I had ever smelled was wafting at me from her oven. I literally almost started drooling.

I turned to her and asked was it was. When she said roast chicken I almost didn’t believe her at first. And when she said it was actually her go-to, easy party recipe I really didn’t believe her!

Quick tip: If you don’t have fresh herbs to use substitute two teaspoons of each dried.
