A Tasty New Twist on Cheesy Pasta and Chicken Thanks to One Ingredient

Do you get tired of the endless chicken dinners? Me too! Chicken is great for many reasons: it’s healthy, it’s cheap, and it’s easy to cook. It can also get boring really fast, especially when you tend to rotate through many of the same recipes over and over. I’m always on the lookout for something new, which is why I sat up and took notice when this recipe came across my Pinterest feed. It’s familiar enough to make it easy to cook, but different enough to make everyone at the table excited about chicken again.

This recipe is a lot like a grown up mac and cheese, with chicken and one secret ingredient to make it new – salsa verde! That zesty kick turns a chicken pasta into something unique and delicious. I’ve already made this recipe three times in the last two weeks, and my kids have already asked for it again. My biggest complaint is just how easy it is to overeat when it comes this dish – it’s that good. And who doesn’t love a one pan dinner? Quick tip: We didn’t find this to be too spicy, but if your salsa verde is hotter than ours, try swapping out the pepper jack cheese for mozzarella instead.
