These lemon blueberry cake and cheesecake bars are the perfect light and tasty treat for any time of year but are especially great for Spring and Easter time. The lemon flavor is bright and perfectly complements the rich and tangy cheesecake. And the blueberries add an extra pop of sweetness that balances everything out and keeps you coming back for more.
Because these need to chill they’re great make ahead dessert. Plus, despite having two layers they’re incredibly easy to throw together—much less time consuming than a traditional cheesecake. They’ve long been a favorite of my family and will become one of yours.
Ingredients
Graham Cracker Crust
10 graham crackers (honey flavor) crushed to fine crumbs (about 1 1/3 cups crumbs)
2 tbsp sugar
1 tsp lemon zest
5 tbsp melted butter
Cheesecake
2 packages cream cheese (8oz. each)
2 eggs
2 tbsp lemon zest
¼ cup lemon juice (fresh)
½ cup sugar
1 ½ cups fresh blueberries
Instructions
Heat oven to 325 degrees. Line a 9in pan with aluminum foil and spray with non-stick spray.
Combine ingredients for crust into a bowl and mix until all crumbs are wet and the mixture looks sandy.
Press the crust mixture firmly into the bottom of the pan and bake for 10-15 minutes until lightly toasted.
When the crust is cooling make the cheesecake.
Using a hand or stand mixer whip the cream cheese until it’s smooth. Add in the rest of the cheesecake ingredients and mix until well combined and creamy.
By hand fold in the fresh blueberries to the cheesecake mixture and pour onto baked crust and smooth out. OR you could pour cheesecake onto crust and then top with blueberries. Either way will turn out fine.
Baked for 35 to 40 minutes until top is lightly browned and center jiggles just slightly when you shake the pan. Cool for an hour at room temperature and refrigerate until chilled and ready sot serve.

Quick tip: To make fine graham cracker crumbs you can place crackers into a large Ziploc bag and crush with a rolling pin. Or if you have one add crumbled crackers to your food processor and process until fine crumbs.
