Super Easy Citrus Shrimp
Citrus and fish are always a great pair, but before trying this recipe I never would have thought to use orange juice! It turns out shrimp and orange juice are the perfect pair and I can’t imagine making it any other way now.
My son and his best friend LOVE shrimp. They can’t get enough of it.
To make the shrimp moist and tender I brine it first. I let it soak in the brine for 30 minutes. Then soak your shrimp for 30 min. Then I drain the shrimp in a colander while I whisk together the marinade. As the marinade is simmering down I gently pat the shrimp dry with paper towels before tossing it in for a quick cook.
I like this recipe because it is light and refreshing. It’s not as filling as some dishes so if I want my son to share I have to add some heavy sides to fill him up. I like the lightness as it’s much easier to fill me up these days then it is his growing teenage self. While I consider this a meal for me, it’s more of a quick snack for him and his friends.

Quick tip: For tender moist shrimp always brine it first. For each pound of shrimp, combine 2 quarts water, 1/4 cup salt and 1/4 cup sugar in a large mixing bowl. Whisk together until the salt and sugar dissolve.
