This Is My Favorite Cake To Make For Every Holiday
I love cranberries; they’re perfectly tart and sweet, and they’re the perfect size to pop into your mouth! They also happen to be the perfect size to top a cake for dessert. Or should I say: they’re the perfect size to line the bottom of a cake pan for an Upside Down Cranberry Cake!
Traditionally, cranberries are in season during cooler months, like in autumn or winter, but you can always buy a bag of frozen cranberries in the freezer aisle during any time of year. The tart berries against a sweet and light cake is the perfect combination for spring, summer, fall, or winter.
I am often the family member that is commandeered to make the dessert for family gatherings and holidays, and my Upside Down Cranberry Cake has been my go-to dessert for the past five years. Nobody ever seems to get tired of it!
The recipe is actually quite simple, and I had no idea something so simple could be so good. Surprisingly, even my little cousins in the family enjoy it too. You wouldn’t think kids would be too fond of cranberries, but they love to pick them out of the top of their slice of cake and pop them into their mouths!

Quick Tip: Add a squeeze of lemon juice over the cranberries to enhance their tart flavor.
