I think my favorite part of this recipe is all that cheese! Using a box mix of White Cheddar mac and cheese, plus six slices of provolone, means that this recipe is just oozing cheesy goodness. Another great thing is that you only need five ingredients to make this dinner, and they aren’t hard to find or keep on hand. As always, it’s a great idea to keep meat pre-cut or pre-cooked in the freezer to make weeknight dinners even simpler to toss together. This recipe doesn’t freeze well due to the macaroni, but if you sprinkle on some more cheese the next day and pop under the broiler, you’ll love the leftovers!
Ingredients
1 package Horizon Organic White Cheddar Cheesy Deluxe, or any package of White Cheddar Mac and Cheese
1 TBSP olive oil
1 pound London Broil, cut into bite sized pieces
1 green bell pepper, diced
1/2 medium onion, diced
6 Provolone Cheese slices
Instructions
Cook the Horizon Organic White Cheddar Cheesy Deluxe as directed.
In a large pan, heat the oil over medium heat. Add the London Broil pieces and cook in batches, removing from the pan when just cooked through. Add the bell pepper and onion and sauté until tender.
Add the meat back to the pan and stir in the macaroni and cheese. Top with the provolone and broil until the cheese is lightly browned.

Quick tip: Be sure to leave the macaroni just a little al dente so that it doesn’t get mushy during the broiling step.
