It’s Amazing What a Crock Pot Can Do
I am always on the hunt for crock pot meals. I usually reserve Sundays for cleaning after church, so any recipe that involves me forgetting about it for a few hours is gold in my book. It’s so much easier than slaving over the stove and oven when you have a million other things to do on your day off.
After church one Sunday last month, we went over to my in-laws’ house to celebrate my father-in-law’s birthday. Like us, Tex Mex is one of his favorite cuisines, so he requested this chicken queso my mother-in-law had made him before. The guys and kids were in the living room watching football while I helped in the kitchen. He talked about this chicken queso the whole way home, so when she lifted the lid on the crock pot I was amazed.
She had set up the chicken and everything before church, so it was just about ready by the time we made it home. No goopy, gross chicken hands for me – we whipped up some minute rice and black beans and the meal was complete! Within minutes we were all around the dining table enjoying this chicken dish, straight from the crock pot!
