Isn’t Everything Better With Bacon?

Swiss cheese and bacon would have been a fine combo, all on its own. But then they added blackberry jam! And jalapenos! Be still my heart – I absolutely love this sandwich! I find it to be the perfect mix of savory and sweet, all wrapped in a warm, gooey bundle that you can hold with two hands and devour.

As recipe author Cathy says, “THIS is how a grilled cheese should be. Or, at the very least, it’s one mighty fine combination.” I couldn’t agree with her more. The cheesy, salty, slightly spicy and decadently sweet mixture of these ingredients makes every taste bud in my mouth want to just roll over and die from happiness!

 

INGREDIENTS

1 Tbsp. butter

2 pieces sourdough bread

4 slices Swiss cheese

4 pieces bacon, cooked

½ jalapeno, sliced (*for less spice, remove seeds)

3 Tbsp. blackberry jam

 

DIRECTIONS

Butter one side of each slice of bread. Place bread, butter side down, in skillet.

Top one piece of bread with cheese, bacon, and jalapeños.

Top the other piece of bread with blackberry jam.

Put sandwich together (so blackberry jam is on the inside of the sandwich); grill over medium heat, flipping after 4-5 minutes.

Grill until both sides are golden brown and cheese is melted.

Quick Tip:  For a quicker and more even melt of your cheese, so that your bread doesn’t burn before your cheese has melted, use shredded cheese instead of slices (the finer the shred, the better) and really pile it on.
