You Are Going To Want A Second Helping Of This Savory Beef Stew!
Let me start out right at the very beginning here by telling you that this is NOT your sainted Grandma’s recipe for beef stew. This is more like a recipe developed by your crazy cousin Hattie’s millennial-aged daughter, who is away at college, trying to pull together a meal at the end of the quarter out of the ingredients she still has on hand. Let’s just say that Ashley’s recipe is different.
But as anyone over the age of 10 knows for a fact, necessity is, indeed, the mother of invention. So while this is NOT going to taste anything like your standard, ho-hum beef stew with carrots and potatoes, it is bursting with flavors. Slightly sweet and slightly savory, I think you are going to be pleasantly surprised by how much you are going to like this unusual version of beef stew.
It does have the standard carrots and potatoes, along with nice, big chunks of stew meat and some onion and celery. So far, so good – right? Then comes the interesting part. You add honey. Gack! Honey? In my beef stew? I can just hear y’all out there now! But wait – you also add an equal amount of….wait for it….balsamic vinegar! Gasp! There you go again!

Quick Tip: In a hurry? You can mix this all up in your slow cooker the night before and then just turn it on to the desired temperature setting before you leave your house.
