I’m sure, just like me, you’ve had the classic Thanksgiving sweet potato side dish. You know which one I’m talking about: the kind with the little marshmallows melted on top that are super gooey when you scoop into it.
But, if you’re also anything like me, you get a little sick and tired of the same side dish for every holiday. That’s why I really love this interesting Mexican Sweet Potatoes side dish to serve at your next Thanksgiving meal.
Hear me out on this one; I know it sounds a little strange, but adding savory ingredients to sweet potatoes in my opinion taste even better than topping it with overly sweet marshmallows. All you have to do is load up each sweet potato with some black beans, diced tomatoes, and a dollop of sour cream to finish it all off.
The first time I served this side dish for my family at Thanksgiving, everyone was a little skeptical. But after trying them, they really like them and now it’s become a staple that I make it every holiday. If you’re at all like me, you’ll take my advice and save the marshmallows for dessert! Even better? You can make these babies in the microwave if you’re pinched for time!
