I have never really stopped long enough to give much thought to just what makes comfort food comforting. I imagine that it is a little bit different for each person. Is it because it is warm? What about pudding? I find that comforting, and it is usually served at room temperature or chilled.
I think it is not so much a characteristic of the food as it is the frame of mind it puts us in when we are eating it. We become nostalgic and dreamy, feeling like we are wrapped in a warm embrace. Food has the power to evoke such feelings within us.
INGREDIENTS
4 Chicken Breasts (or enough to fill pan)
6 Slices Swiss cheese
1 can Cream of Chicken Soup
¼ cup milk
Stove Top Turkey Stuffing (about ½ box)
¼ cup butter, melted
INSTRUCTIONS
Preheat oven to 350 degrees F.
Cover bottom of pan with chicken. Lay Swiss cheese over chicken.
Mix 1 can cream of chicken soup and ¼ cup milk. Pour mixture over chicken.
Top with ½ bag (or more) of Stove Top Turkey Stuffing. Drizzle ¼ cup butter on top.
Bake for 45-60 minutes.

Quick Tip: Want to freeze this for use on another occasion? No problem! Here’s how you do it. Go ahead and prepare it according to the recipe, but stop and freeze it right after you have poured the Cream of Chicken soup mixture over the top of the chicken. Whenever you are ready to bake it, take it out of your freezer and let it completely thaw in your fridge overnight, or however long it takes. Then continue with the balance if the recipe, topping it with stuffing mix and butter. Bake according to recipe instructions.
