Sink Your Teeth into a Surprisingly Elegant Stuffed Meatball
Have you ever just wished that you could snap your fingers and everyone would get exactly what they want for dinner? Between kids and spouses, it’s hard sometimes to come up with meals that satisfy everyone. One person wants delicious, sophisticated flavors; another person just wants cozy comfort food. The kids want something “fun”, and I just want something that doesn’t take hours to make. It’s enough to make you want to run away to the circus. But then along come recipes like this French Onion Stuffed Meatball, and all is well again.
This recipe combines the elegant flavor of French Onion Soup au Gratin with cheesy stuffed meatballs in a comforting dinner entrée that my family cannot get enough of. The ingredient list is a little long, but it doesn’t take too much effort to create something that is an absolutely stunning centerpiece for your table. I would serve these to the Queen if she ever came by, that’s how good this recipe is. Big thanks go to the chefs at Cupcakes and Kale Chips for sharing such a delicious way to enjoy a compromise for a weekend dinner. I personally think these are great for a cold winter night, but don’t let me tell you that they wouldn’t also be great in the summer.

Quick tip: When making meatballs, it’s important to not over mix the meat with the seasonings and breadcrumbs. Just incorporate the ingredients in as few folds as possible.
