This creamy, crunchy and savory chicken salad will become a regular part of your lunch rotation. (After all, it is the VERY BEST I’ve ever had!) Plus, it really couldn’t be easier to throw together. Kids and adults alike go nuts for it. Even my pickiest eater gets excited when I tell him this is what’s on the menu.
And, really, it’s hard to go wrong with a recipe passed down to you by your grandmother. I think we can agree that most of ours could whip up just about any recipe and make it one of our favorites. So if you’re looking for a simple meal or just want something outrageously tasty give this chicken salad recipe a try.
Ingredients
1 cup mayonnaise (I use low fat)
1⁄2 teaspoon salt
3⁄4 teaspoon poultry seasoning
1⁄4 teaspoon onion powder
1⁄4 teaspoon garlic powder
1⁄4 teaspoon ground black pepper
1 tablespoon lemon juice
3 cups chicken breasts, cook and diced
1⁄2 cup celery, finely chopped
1⁄2 cup chopped green onion
1 (8 ounce) can water chestnuts (drained and chopped)
1 1⁄2 cups swiss cheese, diced
Instructions:
In a medium bowl, whisk together the mayonnaise, salt, poultry seasoning, onion powder, garlic powder, pepper, and lemon juice.
In a large bowl, toss together the chicken, celery, green onions, water chestnuts, and swiss cheese. Add the mayonnaise mixture, and stir to coat. Chill until serving.

Quick tip: Pick up a rotisserie chicken from the grocery store, shred it up, and use three cups to make this recipe. Quicker and easier than cooking your own chicken if you’re short on time.
