You’ll Sneak Sick Days From Work Just To Make This Gumbo
I recently stayed over at a friend’s house for dinner, and she made us her favorite gumbo dish. When I was eating it, I couldn’t get enough! In fact, I ate three bowls of it all by myself!
My friend was snickering throughout the whole meal. When I asked her why, she told me she couldn’t believe that I like a vegan meal so much. I had no idea her gumbo was vegan – I was astounded!
This meal tasted to savory and hearty. I always thought vegan meals consisted of cold vegetables and weren’t filling, so I just had to nab the recipe from her. I’ve made this Gumbo With A Healthy Twist for my kids, without telling them it was vegan, and they all loved it too!
I usually like to eat spicy food, but I dialed back on the spices for my kids; It’s great that the recipe can be adjusted as needed for different palates. Plus, since most of the ingredients are vegetables, you can add in or remove which ones you want or don’t want!
This is the perfect meal for cold afternoons or sick days from work and school. You’ll get plenty of vitamins and nutrients in each bite, and the flavor is very rich.

Quick Tip: You can omit the Cajun seasoning, if you don’t like spicy food.
