This recipe will soon become a favorite of yours whether you’ve happened to forget the tortillas or not! It’s got all the flavor of your favorite Mexican dish but in an ooey, gooey pasta. Plus, it’s so quick and easy to throw together you’ll wonder how you ever got by without it before.
There are only a handful of ingredients and everything cooks in the same skillet—no separate pot for boiling your pasta. I’ll admit I’ve continued to “forget” the tortillas fairly often since discovering this recipe and no one has complained. That tells me it’s a keeper!
Ingredients:
1 pound hamburger meat
Sea salt and pepper to taste
1 teaspoon chili powder
½ teaspoon garlic powder
16-ounces salsa
1½ cups water
8-ounces whole grain pasta, any shape (gluten free works great too!)
8-ounces shredded cheddar or Colby jack cheese
Directions:
In a large skillet, brown hamburger meat until no longer pink.
Drain excess grease if necessary.
Season meat with salt, pepper, chili powder, and garlic powder.
Stir in salsa, water, and pasta. Bring to a boil.
Turn down heat to simmer, cover and cook for about 10 minutes or until pasta is tender.
Turn off heat, sprinkle cheese over the mixture in the skillet, and put the lid on for 2 minutes to melt the cheese.

Quick tip: If you prefer season the ground beef with your favorite taco seasoning instead of the garlic and chili powder.
