Make This Tasty Meal Tonight And Watch Your Family Go Nuts (in a good way!)
This was one of those great dishes that you happen upon by accident. Does that ever happen to you? You’ve got your mind set on a certain recipe for supper, start pulling out ingredients and pots and pans and suddenly realize you’re missing one key ingredient. So you’ve got to get creative.
I hate to say it but that probably happens to me at least once a month. I’m not really the most organized grocery shopper and find myself easily distracted by things I suddenly want instead of just buying the things I need. It can make things a little interesting come supper time—just ask my kids as they watch me running around in a flurry wondering how to salvage my dinner plans.
Luckily, it usually turns out okay in the end—or at least we end up with something on the table. My husband is pretty awesome when it comes to jumping in and steering the dish in a new direction, but this was one I discovered on my own when he was out of town. We were getting ready for our usual taco Tuesday when I realized I forgot tortillas—the foundation of the taco!
And, so, this easy skillet supper came to be instead.

Quick Tip: Stir a can of black beans and corn in with the salsa for an extra kick of protein and veggies.
