Delicious Asian Beef with Crisp Vegetables That Anyone Can Make
Aren’t those days when you just don’t know what to cook for dinner the greatest? You get home after a long day, you forgot to lay something out, and no one has any ideas except for the kids who unanimously vote for pizza for the third night that week. Takeout starts to look pretty good to me on those nights.
So when I come across a recipe that imitates my favorite takeout, Asian beef with mushrooms and snow peas, I start jumping for joy. It’s easier to tweak a recipe like this to suit dietary needs, it tastes delicious, and I don’t feel so bad about serving it up to my family when I don’t know what else to cook. Win-win for everyone.
This recipe does take just a little bit of thought in preparing the meat, but want to know my secret for getting this on the table fast? Cut up the beef in large batches and freeze smaller batches flat – the single-meal servings thaw in no time! Big thanks go to Julia’s Album for this delicious recipe that I’ve made many times. Add in some frozen egg rolls if you want a fast meal, or eat it as is for lunch.

Quick tip: Don’t have tamari? Swap it for ½ cup low-sodium soy sauce.
