You Won’t Mind Doing The Dishes For This Dinner Recipe
I have fond memories growing up of watching my mother in the kitchen. Observing her fly around as she cooked up some of the most delicious foods I’ve ever tasted was one of my favorite childhood pastimes—and I was so excited each time she gave me a task to do. She was a master of multitasking as she moved from dish to dish, making sure everything was perfect.
She stayed at home with us kids until my youngest brother started kindergarten and then went back to work as a fifth grade teacher at the local elementary school. I remember her shifting her cooking style to accommodate the reduced time she had to get dinner on the table, so that everything was still tasty but didn’t require her to spend two hours of her night preparing.
That was my first introduction to one pan dinners. She could go from raw ingredients to delicious meal in thirty minutes flat (which was greatly appreciated by my hungry siblings and I), and never seemed to miss a beat.
This recipe reminded me of one my mother would have made us back then. Shockingly simple yet still full of flavor that the whole family will love.

Quick tip: Line your pan with aluminum foil (sprayed with cooking spray) to make clean up even easier—just toss it away when you’re done.
