A Mexican Restaurant Favorite In Your Own Kitchen
I love Mexican food. More accurately, I love Mexican restaurants. I love the bright colors, the fun music, and I love the food! One of my favorite parts is the white queso dip they bring with the chips and salsa – not the cheesy dip that sometimes comes with beans, but the thin sauce that you can never get enough of. It’s the most delicious way to enjoy cheese that I know of, and I have tried for years to replicate it at home. No matter how many combinations of cheese I tried, I could never get it just right. I knew there had to be some secret ingredients I was missing, but I never would have imagined what they were.
When I found this recipe by Life with the Crust Cut Off, my first reaction was disbelief. There’s just no way that THIS is what makes white cheese dip so good. But I went out on a limb and the result? An exact copycat of my local Mexican joint’s cheese dip. This is dangerous stuff. I put it on just about everything these days, and it’s easy to get addicted to the flavor. The nice part is that one batch makes a ton, so you can easily get your fix right at home.
