This recipe, while exceedingly simple, will give you a better way. A way not to have your bread, and eat it, too. So to speak!
Although the idea seemed a bit strange to me, at first, using romaine lettuce leaves to replace the bread in a BLT makes sense. After all, it isn’t a BBLT (bread, bacon, lettuce and tomato), now is it?
Think of all the carbs and calories you won’t be forcing on your body. That has got to be healthier, for most of us. I thought of all the various types of sandwiches I eat, and the only ones that really require bread are grilled cheese and PB&J.
INGREDIENTS
4 slices of bacon, preferably apple wood smoked
1 tomato, sliced thin
2 whole romaine leaves
2 tablespoons mayonnaise
Salt and pepper to taste
DIRECTIONS
Spread each lettuce leaf with a generous portion of mayo.
Sprinkle with salt & pepper
Top with two strips of bacon, then a layer of sliced tomatoes, and two more slices of bacon.

Quick Tip: To assemble and eat this without it falling apart, lay your two romaine leaves side-by-side, but not quite touching. Spread with mayo and season. Stack one piece of bacon, tomatoes and other strip of bacon on each leaf. Now fold one over the other, so romaine leaves are on the outside. Another way is to lay down one romaine leaf, spread with mayo and season. Lay 2 pieces of bacon side by side on leaf, overlapping, if necessary. Top with tomatoes and two more slices of bacon. Take second romaine leaf and spread lightly with mayo, place it, mayo side down on top of bacon, making a sandwich using the lettuce leaves as bread. Or you can make 2 separate sandwich wraps by spreading each leaf with mayo, stacking one piece of bacon, tomatoes and other piece of bacon to one side of the leaf. Then fold leaf over and eat it like a long, thin sandwich. Repeat with other leaf.
