These pineapple barbecue chicken sliders will become a new family favorite the first time you try them! They’re ridiculously easy and start with a rotisserie chicken, so all you need to do is assemble the sliders and pop them in the over for a few minutes to get nice and toasty. They’re packed with flavor from tangy barbecue sauce, sweet pineapple, tender chicken and melty cheese.
I have these made start to finish in under a half hour—they’re truly a weeknight miracle! And to say my family loves them would be an understatement. There’s never a single bite left over and they always want to know when I’m going to make them again. A winning recipe for sure!
Ingredients
1 tablespoon butter (to grease)
12 sweet slider buns (cut in half)
1 rotisserie chicken (skin discarded, shredded)
1 cup store-bought barbecue sauce
2 cans crushed pineapple (drained, 8 ounces each)
2 cups Monterey Jack cheese (shredded)
3 tablespoons butter (melted)
2 tablespoons sesame seeds
Instructions
Preheat the oven to 350ºF. Grease a 9×13-inch baking dish with butter.
Place the bottom of the slider buns in the bottom of the baking dish.
In a large bowl add the rotisserie chicken and barbecue sauce and mix to combine. Place on top of the slider buns. Top with crushed pineapple and monterey Jack cheese. Place top buns on top of all of the sliders. Brush the tops with melted butter and sprinkle with sesame seeds. Bake for 10-15 minutes until cheese is melted and sliders are warmed through. Serve.

Quick tip: This recipe can be made ahead of time. Assemble the sliders then before brushing with melted butter cover and refrigerate until ready to bake.
