You Won’t Find Any Easier Comfort Food!
This is an absolutely amazing recipe from Kathleen, and I am ever-so-glad that I found it! As Kathleen describes it, “It’s one of those dishes that is so perfect in its pure, wholesome, simplicity….” If you are into comfort food, like I know you are, or you wouldn’t have stopped to look at this recipe, then you are going to want to add this one to your collection.
This recipe uses pre-cooked chicken. The way that I accumulate my pre-cooked chicken for recipes like this is to always make an extra piece of chicken when I am cooking chicken for another recipe. Then I cube or shred it and freeze it until I have enough to use in a recipe that requires it.
Or I sometimes will buy a rotisserie chicken, if I really want to make a recipe and don’t have any pre-cooked chicken on-hand. You can prepared this casserole without using pre-cooked chicken, if you want to. Just grill, broil, bake or simmer some fresh chicken and then shred or chop it.
Let’s look at some of the versatility of this recipe. You could add sautéed onions or mushrooms. You could add some crumbled, crispy bacon. Instead of the panko bread crumbs, try crushed corn flakes or Ritz crackers. Each little ingredient you swap out or add is going to give it a slightly different flavor.

Quick Tip: You can easily make this dish ahead of when you want to bake it. Go ahead and follow the recipe up to the point right before you make and apply the crunchy topping. Wait and do that immediately before you plan to bake it, so that it doesn’t get soggy.
