Just One Pot and So Much Flavor! What’s Not To Love?
Right after college I moved back in with my parents to save money while I job hunted. My parents were very generous and didn’t ask that I paid rent, so I tried to make myself as useful as possible to pay them back. Both of them worked full time and didn’t get home until after five so I decided to take over making dinner.
I wasn’t much of a cook, so I started with easy recipes that I knew I wouldn’t mess up. After all, it wouldn’t really be much of a contribution if the dinners I made were inedible. Slowly but surely my skills started to improved in the weeks following graduation, and the dinners I made became a little less dependent on the words ”quick” or ”easy” to get me to want to make them.
One night over one of my attempts at a fancier dinner my mom started talking about a dish she remembered from her childhood. She said it was a sausage pasta dish her grandma always made that was her way of cleaning out any veggies she had sitting in her fridge. I took it as a hint that should be the next meal I should make for them.

Quick tip: You can subsitute another favorite sausage for the Keilbasa if you’d prefer—Chorizo adds a great spice.
