Thanksgiving In A Slow Cooker? Sign Me Up!
I use to love the idea of making a full Thanksgiving dinner from scratch. I do love to cook after all so the idea of being able to present my family with a picture perfect holiday dinner was a dream. But then, reality set in as year after year I frantically ran around the kitchen cooking up traditional dishes that would go uneaten (does anyone ever eat the brussel sprouts?) and trying to time the turkey just right so that it was hot out of the oven but not overly dry or burned. Those days are over.
When I first discovered this recipe, I thought that there was no way you could make a Thanksgiving worthy dinner in a crock pot. But why not? The crock pot makes so many other amazing meals, why not take on Thanksgiving as well? So I gave it a try. Boy was I impressed! Stuffing, moist chicken breast and vegetables all in one dish! And I only have one pot to clean!! It was like a dream.
This recipe is absolutely perfect for anyone who has just a small crowd to feed at Thanksgiving (you can only fit so much I a crock pot). However, if all of your guests bring a slow cooker with them, you could easily make this for everyone!!

Quick tip: Skip wrapping the veggies in foil and let them marinate in the juice with the chicken and stuffing.
