My friend always seems to find the best recipes from Pinterest, so I tend to borrow them and use them as inspiration for my own recipes. This recipe is called Slow Cooker Turkey Taco Chili, and I love making it in big batches.
Then, I portion out each serving and freeze them for individual meals throughout the week. Using ground turkey instead of chicken makes the meals just a little bit healthier too, but it still tastes very, very good.
I don’t know where I’d be without my close friend – she always seems to know exactly the kind of recipes I like to make! What a coincidence!
Ingredients:
1 onion, chopped
1 bell pepper, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 8-oz can tomato sauce
10 oz package frozen corn kernels
2 14.5-oz cans diced fire roasted tomatoes
1 packet taco seasoning (or 2 heaping tablespoons of homemade taco seasoning)
1 tbsp cumin
1 tbsp chili powder
1 package (20 oz) ground turkey
1/4 cup chopped fresh cilantro
Instructions:
Brown ground turkey in a medium pan.
Combine cooked turkey, beans (with liquid), onion, bell peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker.
Cook on low for 10 hours or on high for 6 hours.
Top with fresh cilantro. Also try it with cheese and sour cream.
