Who Wants Some Cheesy Casserole Comfort Food?

I know that when I get a recipe from Kristyn, it is going to be quick, easy comfort food at its finest. This recipe of hers did not disappoint. If you get chicken that is already prepared (rotisserie, deli or even canned), you can have this homey, comfort food dish prepped, cooked and on your table in 35 minutes flat.

But even if you make your chicken from scratch, that will only add another 30 minutes to your total time, depending on the thickness of your chicken, if you bake it in your oven. You could prepare it on the top of your stove in even less time than that. This is really a small investment of time to produce a crowd-pleasing dinner that everyone in your family will love.

This casserole gives a humorous nod to French cuisine, in that it uses both French-style green beans (an option) and French fried onions as ingredients. Don’t you just feel like a fancy French chef already? Next thing you know, you’ll be sporting one of those tall chef’s hats and a spiffy white jacket!

Seriously, though. This casserole tastes like you worked all day on the sauce, and the mix of ingredients is a nice balance of chicken and veggies. Those French friend onions on top are a bonus!

Quick Tip:  If you want to get a head start on this dish, with a little bit of planning, you could bake a couple of chicken breasts earlier in the week. Just line a cookie sheet with some foil, drizzle them with some olive oil, sprinkle on whatever herbs or spices you prefer, and bake them at 350 degrees F for about 30 minutes. If you get the chance, chop them up right then, after they have cooled. If not, keep them in an airtight container in your fridge until you are ready to assemble this casserole later in the week.
