Little Known Ways To Use Thanksgiving Leftovers
How many times have you ever sat down to any Thanksgiving dinner, whether it was one with a plethora of family, a few close friends or even just by yourself, and eaten the entire meal that was fixed – every last scrap and crumb – in one sitting? It has never happened to me in my lifetime!
In fact, I know that when I am making the annual Thanksgiving feast at my house, I make sure that I deliberately cook enough to ensure that there will be copious leftovers of everything. I love Thanksgiving leftovers! They all just seem to taste better on that second or third day, don’t they?
On the first feast of leftovers, I will pretty much replicate the original meal. By the day, however, most of my favorite goodies are gone. Bye-bye dressing! So long, scalloped oysters! See you next year sweet potato casserole, green bean casserole, corn soufflé, and fluffy fruit salads! I’ll miss you, pumpkin pie!
Now I am almost down to the bare bones of the turkey and that nearly full dish of cranberry relish. So what can I make of those. What new and tempting dish could I possibly create? Here comes Heather’s quirky turkey sandwich to my rescue. Think grilled cheese on steroids and you’ll get the idea!

Quick Tip: A little bit of horseradish or spicy brown mustard applied to your bread before the cranberry relish would give this sandwich added zing!
