Light and fluffy this waffled ridges in this omelette are perfect for catching toppings. I love to top mine off with sour cream, avocados, and A1 sauce.
When my husband and I were first married a favorite date was ordering an omelette to share for dinner. We’d hold the onions and cover it in sour cream and A1 while drinking a gallon of coffee each before heading back home to study for our college classes. Every now and then we like to whip up an omelette, skip the coffee and studying, and sit and talk about how much has changed and how much has stayed the same over the years.
Ingredients:
2 eggs
2 tbsp milk
2 tbsp shredded cheddar cheese
additional add-ins (I used diced ham and bell pepper)
salt and pepper to taste
Instruction:
Step 1: Turn on waffle maker and spray with non-stick cooking spray.
Step 2: Whisk eggs and milk in a small bowl.
Step 3: Stir in the rest of the ingredients.
Step 4: When waffle maker is hot, dump egg mixture onto the iron and shut.
Step 5: Let cook 2-3 minutes or until eggs are cooked through.
Step 6: Removed from waffle maker, top with desired toppings (I like sour cream and salsa) and enjoy!

Quick tip: Be sure to spray with non-stick cooking spray between each use. This is an easy cheat, but only if you remember to grease the waffle maker.
