This super simple Crockpot Chicken and Rice will definitely be on repeat for family dinners from now on! It requires only 4 ingredients that you might already have on hand and very little hands on work. Cooking the chicken in your crockpot with onion and cream of mushroom soup makes for insanely tender chicken that’s full of flavor. The addition of wild rice makes it a perfecly hearty fall dish that’ll fill—and warm—you right up.
The first time I made this my kids and husband couldn’t get enough of it. My son’s actually requested it for his birthday dinner next month. You’ve gotta give it a try!
Ingredients
2-4 chicken breasts
1 can cream of mushroom soup (or cream of chicken)
1 onion, chopped (I used minced onion flakes)
1 box Long Grain and Wild Rice with Seasonings (I used Uncle Ben’s microwave rice)
Instructions
Place chicken in bottom of slow cooker. Sprinkle chopped onion over top. Top with cream soup. Cover and cook on low 7-8 hours. Cook rice according to package directions*. Before serving, stir rice in. Serve hot.

Quick tip: For an extra veggie boost add in some chopped broccolit florets with the chicken, onions and soup—fresh or frozen would work.
