Hearty, Comforting and Oh So Tasty—This Dinner Isn’t One To Miss
I don’t know what it is but once fall hits all I seem to want is warm, hearty and super comforting dishes for breakfast lunch and dinner. However, fall is also my family’s busiest time of year. Betweentwo boys who play football and a daughter who’s in a dance class that performs before Christmas every year and all the holiday prep our household can get a little chaotic.
That means I rarely have the time to actually spend a few hours in the kitchen preparing the hearty soups, stews and casseroles I love. Instead, we often settle for old stand by recipes that I know I can have on the table quickly—even if it doesn’t quite satisfy my comfort food cravings.
I was out shopping with a friend the other day and telling her my dinnertime woes when her eyes suddenly lit up. ”I have the perfect recipe for you!” she said before quickly digging her phone from her purse. Curious to what she’d have to share I waited for her to pull it up.
Instantly, just from the photo she showed me I could tell it was going to be delicious. I bought the ingredients for it that night and made it the next day—it was a hit!

Quick tip: To save time cook the rice the night before and then stir it into the crockpot and let it heat up for 10-15 minutes before serving.
