Dinner Has Never Looked Better Than This Hearty & Delicious Stew
Last winter my sister had her first baby, and I was beyond thrilled to finally be an aunt! There’s a sizable age gap between us and I had my kids young, so my children are all teenagers and I ware more than ready to have a little one to spoil again. Her husband works out of town for half the week, so helping her out with meals like this crockpot beef stew was a major stress reliever for her.
Not that she’d admit it, though. She is fiercely independent and hates asking for help. Pretty much up until the day she had my niece she was reassuring my mom and I that she wouldn’t need any extra help from us on days her husband was gone. I’ll bet you know where this is going?
After a week off to spend with my sister and their little one her husband went back to work. And about two days after that I got the first call from her. Turns out she needed a little more help than she thought!
Of course, I was more than happy to come watch my niece while she snuck in a nap or whip up a few meals to stock her fridge and freezer. And this dish was by far her favorite.

Quick tip: To make this on a busy morning prep your meat, veggies and beef broth/tomato soup mix the night before. Then in the morning toss everything in your crockpot and let it cook.
