You Can’t Beat A Big ‘Ol Bowl Of Hearty Soup For Dinner
Every once in a while my husband and I find ourselves in a real dinner time rut. We switch off cooking dinner every other day and for the most part are good at coming up with recipes. But then there are the night’s where both our minds are blank. More often than not on those nights we find ourselves making grilled cheese or ordering pizza.
As our kids get older and our lives get busier I find that this is happening more and more. Sometimes we’ll go a whole week without cooking a meal at home and that’s when the guilt starts to hit… the feeling of “oh my gosh when’s the last time my kids ate a vegetable” panic leaves me scrambling to do more home cooking—only to start the cycle again a few weeks later.
While out to dinner with a friend one night I was sharing my dinner time woes with her and asked if she had any tips. Her advice? Call my mom! She said that anytime she needed a tasty recipe to try her mom always had something up her sleeve.
The very next day I took her advice and gave my mom a call. And the recipe she suggested did not disappoint!

Quick tip: For extra creaminess reduce broth by ½ cup and add in ½ cup heavy cream.
