No One Can Turn Down A Big Bowl Of This Hot & Tasty Corn Chowder!
I grew up in northern Minnesota, and the winters are definitely no joke up there. The snow seems almost endless at times and piles to heights upwards of four feet in some areas. But that’s not even the worst of it. Some days it doesn’t even get above zero for a HIGH. And windchills can dip below -40 degrees. Needless to say at a lot of soups like this Crock Pot Corn Chowder as a kid.
And the funny thing was that back then I did not appreciate the soul warming wonder that is a good soup or stew. My mother was an amazing cook and everyone raved about her soup making skills. From classics like chicken noodle and tomato to lentil stew and clam chowder, her from scratch soups were legendary.
And like clockwork my family and I would eat one of her hot and hearty concoctions every Sunday during winter. Most of us ate it happily. I, on the other hand, had to roll my eyes and ask why we couldn’t order pizza like the kids on TV. (A really useless question when there were no pizza delivery places anywhere near our house).
Fortunately, as an adult I now appreciate the appeal of a good soup, and this is one of my favorites.
