There’s So Much Flavor Packed Into This Simple Dish
The other day I was trying to remember the last time my friends and I had gotten together for a good old fashioned girls’ night. Between husbands and kids, jobs and errands the number of times we’ve been able to get together have been few and far between. So while making dinner one evening I decided to send a message to my three best girl friends and see when they were free—we were long over due to catch up!
Fortunately, the stars aligned and we were able to make plans for the following Friday. I would host them at my house while my husband took the kids to his parents’ for some bonding time. As I eagerly imagined how much fun it would be to all be together again without any distraction my mind also wandered to the food I would serve.
While I’m in no way a master chef, I’m fairly talented in the kitchen so knew I could whip something up that everyone liked. But I also didn’t want to spend a lot of time on it—or succumb to the temptation to order out.
Luckily, I never have a shortage of recipe inspiration—between cook books and food blogs there are always new ideas to try! Like this delicious dish…

Quick tip: If you don’t have fresh ginger you can either omit it (this will alter the flavor but only slightly) or use ¼ tsp ground ginger.
