I’m always looking for cooking recipes for kids. I’m sure I’m not the only one whose kids seem to get off the bus after school ravenous every day like they haven’t eaten in over a week. Every afternoon I get home from work—about 10 minutes before they do—with the best intentions. I’m always going to start supper the moment I get home and have it ready before the troups can get too riled up.
And then a pile of laundry distracts me. Or a stack of unopened bills. Or sometimes I just want to put on my sweats before I do anything else dang it. And before I know it the kids are about to revolt and attack the snack drawer and I need to get dinner on the table fast. Or end up ordering pizza for a second time that week (no judgement, right?). That’s when I gravitate towards meals with minimal steps and ingredients I always have on hand.
On one particularly rushed evening I opened my pantry to find that my usual stock of pasta—my number one go to for quick meals—had run dry. After a quick moment of panic where my eyes wandered to the pile of take out menus on our counter I decided that I would just have to think of something else.

Quick tip: You can make this with chicken as well—just chop it into bite size pieces and cook in a skillet before continuing to add the rest of the ingredients.

I did not get a red button to go to the recipe, but I just clicked on the “2” where it showed page “1” and “2”, and the recipe was there. Looks good!
