Gooey, Buttery Grilled Cheese in a Fun New Way
Is there anything better than a gooey, buttery grilled cheese sandwich and a bowl of tomato soup? I can’t name a meal that makes me think of childhood more than that, and my kids probably feel the same way considering how often I serve this up. There’s something so comforting about the crisp grilled bread, the oozing cheese, and the way it all comes together when you dip it in the soup. I didn’t think there was any way to make this meal any better – till I saw this cute recipe by Fifteen Spatulas.
I don’t know if you could call this a recipe, considering it is a basic grilled cheese sandwich – but the cooking instructions are a very cool way to make a grilled cheese a little more fun. Instead of cooking on the stovetop, you get to pull out that waffle iron that you hardly ever use and whip up some grilled cheese sandwich waffles! Trust me, the kids love this method, and I do too. The waffle holes in the sandwich are perfect for scooping up a little more soup, and it’s just fun. Plus you get even more crisp bread thanks to all the bread getting a nice toast instead of just the outer edges. Win-win!

Quick tip: If you typically just put a few pats of butter on the corners of your grilled cheese, don’t do that here. You need to spread the butter out or it will simply fall into the holes of the waffle iron and not get on the bread.
