Delicious Creamy Ice Cream Meets Crunchy Cinnamon Streusel
Who says you can’t have ice cream for breakfast? Okay, maybe your mom did when you were a kid – but you’re all grown up now, and you can have whatever you want! Sometimes what I want isn’t very good for me, but I indulge anyway because life is short. This ice cream bar is actually inspired by a breakfast favorite – cinnamon streusel, and I just couldn’t resist trying it out for breakfast on a hot summer morning. The creamy ice cream, the crunchy streusel, and the perfect marriage of it all on an oatmeal cake base, was just perfection.
This recipe does call for quite a lot of ingredients, and some you may not have in your pantry. It’s a great one to make for company if you want to impress, or to splurge on for a special event for yourself. Birthday breakfast, anyone? I really love all the flavors here – from cinnamon oatmeal to the delicious blend of almond butter and bananas in the ice cream. There are also dates to give it a chocolately flavor.
