Mac and Cheese Bites are the ultimate party or potluck snack that everyone will love. And no one needs to know that they’re suprisingly simple to make! The recipe calls for left over mac and cheese, so just make yourself up a big pot the day before (homemade or store bought—no one needs to know) and then use what you don’t eat for these delicious bites of cheesy heaven.
The simple coating fries up perfeclty and makes the perfect crunchy contrast to the creamy mac and cheese. You definitely won’t be able to stop at just one. You’ll definitely want to make a double batch—these go fast!
Ingredients
1 ½ to 2 cups left over home style Mac n Cheese
1 egg
1 tbsp cold water
1/4 cup flour
salt & pepper
oil for frying
Instructions
Make the bites. Portion leftover macaroni and cheese into tablespoon sized “bites” on a baking sheet. Place sheet in the freezer while oil is heating.
Make the batter. In a bowl combine egg, water and flour. Add other seasonings if desired. Beat until smooth and the consistency of pancake batter. Dip chilled mac n cheese balls into batter and coat.
Fry Mac n Cheese Bites till golden and crisp. Drain on paper towels. Season with sea salt (or other spices, herbs).

Quick tip: If you won’t want to fry your bites once they’re coated place the bites in a mini muffin tin and bake at 400 degrees for 15 minutes or until golden brown.
