Growing up we grilled out almost every night during the summer. My dad fired up the grill, slapped on some burgers, and then served them up to us dripping with ooey, gooey melted cheese. Honestly, for the first part of my life I didn’t realize that burgers came without cheese. It seemed blasphemous. And when it got cold my family still got their cheeseburger fix with this completely divine cheeseburger soup recipe.
Once I moved away from home into my own apartment my cheeseburger consumption decreased dramatically, save for the occasional fast food run when I was too busy running from to and from work or school. And when I was at home to cook for myself it never occurred to me to fry up a burger in a pan or call my mom for her soup recipe—that would have involved way more work than my typical eggs and toast.
But then I met the guy who is now my husband. And for some unknown reason promised for our first date I’d cook him dinner.
Cue the panic.
Completely clueless as to what to make I called my mom for ideas. She suggested her cheeseburger soup. I made it for our first date and have been making it for us ever since.

Why do you use chicken broth? I would use beef broth.
I’d use beef broth, add onions and bacon or even do a bacon Swiss suit with caramelized onion
How about using a can of french onion soup instead of broth? I am going to try it that way.
