I know that it can be hard to narrow in on one favorite holiday—they all bring something to the table including spending time with those we hold most dear. Many adore the warmth of the Christmas season and others love the summer get togethers that celebrate the Fourth of July. But for me nothing beats the joy of Easter and this carrot cake quick bread.

I think my love of Easter started early for me. As a kid I adore all our traditions: going to church, coming home and finding our Easter baskets, an Easter egg hunt at my aunt and uncle’s house, and finally Easter dinner at my grandparents’. It just all seemed so magical.

Now as an adult I try to pass these traditions down to my own kids, which has made them even more meaningful to me. I have two daughters and now that they’re a little older (5 and 7) one of my favorite new traditions is baking together to have an treat to bring to our family dinner.

Because they’re still pretty young (and I try to minimize the size of the kitchen mess) I stick with simple recipes to make with them. And this delicious quick bread fits the bill perfectly.
