Relax! Make Short Work Of Breakfast!
I thought that by this time in my life, I truly had seen it all. Wrong! There was this one more thing that surprised me, which was the recipe that Tonia developed for an amazingly simple, yet satisfying, breakfast pizza. As Tonia says, “It’s like all of your favorite breakfast foods in one slice!”
Now don’t get me wrong, there were many mornings – or maybe they were really early afternoons – in college when I would roll out of bed and stumble, disheveled and bleary-eyed, into the kitchen looking for breakfast, only to find a box of half-eaten pizza. Yum! Pizza for breakfast became one of my favorite things.
But that was more of an accidental circumstance. This serious, purposeful, let’s have pizza for breakfast action. The pizza itself is really made of all of your favorite breakfast foods, just in pizza form, so you can grab a little slice of pizza heaven, and go about your busy day.
Although this recipe calls for the pizza to be made in a cast iron skillet, not everyone has one of those. Rest assured that this can also be successfully made in a regular glass baking dish, as shown in the image. Your family and friends will pounce on this like cats on mice when it comes out of your oven.

Quick Tip: When adding your eggs make sure that they reach the tater tots on the side of the pan and get tucked in among them somewhat. This will help hold the pizza together when you slice it.
