Bring A Taste Of Philly To Your House

Sloppy joes, of any variety, are one of the quickest and easiest meals to prepare. They are basically finished in the time it takes you to brown your meat. Any type of ground meat will work, too. This makes them an excellent choice for lunches on busy days or dinners on hectic nights.

They can be dressed up or down, depending on how you serve them. For lunch, simply adding your favorite chips is fine. For dinner, you could add a salad or some veggies.

Regardless of how you serve them, they are a very filling meal. Just make sure you have lots of napkins at hand, as they aren’t called “sloppy joes” without reason!

 

INGREDIENTS

1 teaspoon cornstarch

½ cup beef or low-sodium chicken broth

2 teaspoons olive oil

1 small sweet onion, diced

1 small green bell pepper, diced

1 pound lean ground beef

2 tablespoons ketchup

2 tablespoons Worcestershire sauce

2 teaspoons taco seasoning (can substitute onion soup mix)

¼ teaspoon salt

¼ teaspoon black pepper

1½ cups shredded sharp white cheddar or Monterey jack cheese

6 hamburger buns

 

INSTRUCTIONS

 

Preheat broiler.

In a small bowl, whisk together the cornstarch and broth. Set aside.

Heat the oil in a large nonstick skillet over medium high. Add the onion and peppers; sauté 3 minutes until tender. Add in the beef and continue to cook, breaking it up and browning, for another 3 minutes. Drain off fat. Stir in the ketchup, Worcestershire sauce, taco seasoning, salt, and pepper. Give the broth and cornstarch a quick stir and add it to the skillet; simmer for about 3 minutes, stirring occasionally, until mixture thickens slightly.

Scoop some mixture onto each bun, top with ¼ cup cheese, and stick under the broiler until melted – keep a close eye on them, so nothing burns! (Alternatively, you can simply add the cheese in with the meat mixture and stir until combined and melted.)

Serve warm with chips and enjoy!

Quick Tip:  When you make these, make a double batch and freeze half (except for putting the cheese on top). Then when you need a quick weeknight meal, pull them out of the freezer and brown them for a few minutes under the broiler, add the cheese and brown until cheese has melted and turned bubbly.
