You’ll Never Miss the Carbs in This Dish
Mine and my hisband’s all-time favorite cuisine is Mexican, whether it’s tacos (his favorite) or enchiladas (my favorite). We could eat it every day of the week with some chips and salsa and be perfectly happy. It’s like confort food for us since we are both from Texas originally.
We first had this dish at one of our neighbor’s house. We try to get together once a month to catch up. Since we all have kids now, it becomes more and more difficult to get together like we used to. Last month we were at our next door neighbors’ house and they made this delicious dish. First the meal started out with margaritas and chips and dips with all the staples: queso, salsa & guacamole.
When we sat down for dinner, Sue brought in this piping hot casserole. When she gave me the recipe, she told me it was a low carb dish and I didn’t believe her at first until I actually read it. The flavor hits all of the notes you’re looking for in an enchilada. With the low carb exciteen, I didn’t feel guilting getting seconds because the casserole is so good!
