Scrumptious Pasta Salad Everyone Will Love
While discovering a new pasta salad may not be exactly a life-changing event, it could be just what you need to conquer the summer doldrums that hit you when you are tasked with bringing a dish to your next picnic, potluck or BBQ. This fresh new pasta salad that Ashley created will do just that. It is quick, easy and so versatile that you can’t help but create a delicious combination of ingredients that will be loved by all.
As Ashley says, “Wal-Mart sells a Broccoli Cheddar Pasta Salad that is pretty popular, so I used that as inspiration to come up with this recipe.” That is the way good cooks do it. They taste something they really like and then they use it as a springboard for their imagination to come up with new and different variations.
This pasta salad is simple – a combination of pasta and some veggies. But what makes it stand out is the use of cheese. You can use any type you like, you don’t have to limit yourself to cheddar. Colby-Jack has been used in the image, but Pepper-Jack, Swiss or any other kind you might prefer would work equally well in this hearty summer salad. Just be sure that you cut the cheese up into small, bite-sized pieces.

Quick Tip: If you are one of those people you just can’t tolerate mayo, try using salad dressing to maintain the creamy texture of this dish. You could also use any of your favorite regular salad dressings, such as French, Thousand Island, Ranch, Catalina or Green Goddess. Each of these would give this salad an interesting new dimension.
