I have always enjoyed a warm, comforting bowl of chicken noodle soup. Whenever I wasn’t feeling well when I was a child that was what I chose to eat, instinctively. It has an almost magical power to cure whatever ails you.
Somewhere in my recipe collection, I have a wonderful recipe for chicken soup. But I only make it once or twice each year, because it takes all day and it is tedious to pick boiled chicken off the bone, after waiting hours for it to be cool enough to handle. By the time it is ready to eat, I am no longer hungry. The next time I make it I think I will use boneless breasts and thighs.
This quick and easy recipe from Holly has everything that is in a classic chicken noodle soup, but it has been cleverly transformed into the form of a casserole. In order to make it quicker to put together, it does require that you have some pre-cooked chicken available. Whenever I make any type of chicken dish, I usually make a little bit extra and cube or shred it and freeze it, so I always some pre-cooked chicken available. You could also use rotisserie chicken and just take what you need and freeze the rest.

Quick Tip: This is an extremely versatile recipe. By changing the meat to beef tips, or even meat left over from a beef roast, you could make beef noodle casserole. You could also use ground beef, sausage, or even meat left over from a pork roast.
