All the Flavor Minus the Guilt of Pasta

When I go to Olive Garden, my guilty pleasure is the chicken parmesan. It is hands down the best italian dish on their menu. The only think about going there is the guilt that follows after eating such a heavy meal (because you have to soak up the sauce with a breadstick, right?).

We went over to my siser-in-law’s house one night and she was making my favorite dish. She has five kids so when she cooks, it’s like cooking in a reataurant because you have to make enough for everyone. She found this recipe online and was trying it out for the first time since the kids were away at summer camp and she had more time for trial and error in the kitchen.

It was just us and our husbands, so she went the zoodle route instead of pasta. This was delicious! The best part was not feeling the heavy stomach eating noodles. The texture of the zoodles mixed with the sauce was so good, plus you dont feel guilty going for seconds. For my kids I’ll probably use regular pasta, but this is one of our new family favorite meals!
