Nothing Beats A Bowl Of This Delicious Soup After A Long Day
I’m going to go out on a limb and confess something a lot of people find totally strange—especially considering I come from the Midwest. But I absolutely cannot stand the taste of beer. Pretty much any kids from the lightest of light beers to dark lagers and IPAs. You can add fruit flavors or earthy fall spices and I still will turn it down.
This made things really awkward when my now husband surprised me on our first date to a local brewer that had just opened up. I’m sure the bartender was really impressed when after carefully inspecting their menu I chose water. But, hey, a girl has her quirks.
Fortunately, that didn’t stop him from asking me on a second date and then a third. Then before I knew it I was meeting his family, and his mom was so excited to share a secret family recipe with me. That recipe? Beer Cheese Soup.
To say I was skeptical of this recipe was an understatement. I mean wasn’t beer an alcoholic beverage best suited for chugging during sporting events or for sampling with other beer aficionados? Not swimming in my favorite type of food!
My desire to make a good first impression on his parents won out, though. And a beer cheese soup addict was born.

Quick tip: Wisconsin beer is just preferred for this recipe because that’s where it originated from—any lager or pilsner will work well. Just pick on you like!
